1/4 cup onion
1 large zucchini, peeled and sliced into bite sized pieces
1 (10 oz) can cream of chicken soup
1 cup sour cream
1 cup cheddar cheese, shredded
1 package herb stuffing (Stove Top)- chicken flavor
3/4 stick butter, melted
Cook onion and zucchini in boiling water until almost soft; drain.
Combine soup, sour cream and cheese. Add to zucchini. Combine stuffing and
melted butter. Spread half of the stuffing mixture in a 9 x 13 dish.
Spoon on the vegetable mixture. Top with the rest of the stuffing mixture. Bake
at 350° for 30 minutes.
